Fill me up buttercup


Lazy and hungry at the end of the day here at the East India Company pier in Göteborg.  Oh yes, I thought ahead and made some carrot ginger spread last night!  Let's make some black bean pasta to go under it!

Hot diggity dog!  aka: pureed ginger-carrot over an arugula and blackbean pasta doublebed. (don't forget the knäckebröd)

what we have here.
- doublebed of fresh arugula and blackbean pasta
- carrot and ginger puree
- avacado
- fresh black pepper
- hot sauce
- knäckebröd (swedish sourdough rye crispbread)
- pate (tartex mushroom vegetarian spread)

huh?
pasta
- boil some water, take it off the heat, soak pasta for eight minutes

carrot-ginger
- peel and cut a bunch of carrots, a ginger root, and a chili pepper, toss it in a blender with a little virgin olive oil and some sea salt, and have at it

Marajana - Pot - Hash - Grass

Here I am, aft in the pantry of this fine lofty ship, minding my own business, making my usual breakfast of oats, blueberries, pumpkin seeds, raisins, pecans, haselnuts, maple syrup, and hot water.  When i reach for the jar of  hemp butter and notice that IT'S ALMOST EMPTY!?  Someone's been eating my hemp butter! er...  it was me.  Anyway, so I manage to work about a spoon full out of the gooie near empty jar of goodness and plop it into my porridge and figure I should perhaps clean the jar out a little to make it easier for washing and reusing later.  So I pour in some near boiling water, close the lid, and shake it like a polaroid pict... no, like a jar of hot water and hemp butter residue.  What do I find but a half full jar full of the sweetest creamiest warm milk of the gods!

Now I have fluffy warm hemp milk in my porridge in the morning :)

this ain't yo mamma's porridge

This is a super tasty, nutrient dense, bowl of energy, and by far my favorite way to start the day right now!



Here's what's inside:
- half cortland apple, cut in small chunks
- fresh strawberries, handful, cut in small chunks
- blueberries, handful
- quick oats, handful
- gracious dousing of cinnamon
- a couple spoonfuls natural peanut butter
- a bunch of crushed walnuts
- some raisins
- hot water

Every morning I put a bit of water on the stove to boil and chop up the fruit into a decent size bowl (large bowl-this is a pretty large quantity of ingredients). Add all the rest of ingredients. I also have my morning little amps pour over coffee ready (not necessarily a healthy choice, but I love it). By this time the water is about to boil. I delicately pour it over the coffee then the oats in the porridge until I see water creeping up the side of the bowl, give her a nice little mix up, let her bask in all her glory, and enjoy it outside on this wet spring morning.



This may look like a lot of food, but lets consider what's here. I have read somewhere that apples are about eighty percent water, and I'm sure many other fruits are probably similar. That takes up about a half to full cup out of the bowl right there. The oats also absorb quite a bit of hot water. All of the ingredients are in their whole form, no added oils, salt, preservatives, or other extras that somehow make it into almost a hundred percent of what's in the grocery store.

It took me some weeks to get this breakfast just right so that I stay satisfied until lunchtime.

Very important for my health and environment, all of this food is organic and as locally sourced as possible. I have been watching the blueberries at the market. I snatched some up when I found they were from North Carolina. This was a treat, and out of the norm for me. I'll wait for berries to be more local next time.

Before I had such wonderful berries availabe I would just use the whole apple, and a few more raisins. One may also buy (or grow) a ton of berries when they are in season and less expensive, chop them up, and throw em right in the freezer to enjoy all winter!

What do vegans eat?

Quaint with a light lisp, "I'll just have a salad."

NO!!!

So there is this idea floating around out there amongst some, that vegans can only eat lettuce. It may just be the case that in many'a back-woods and even mainstream establishments, the only non dead animal or non smothered in butter food choice on the menu is an iceberg lettuce "salad", and it's a poor excuse for a salad if I have ever seen one. So ask yourself the question, "If I were vegan, what would I eat?" Or, if you're in the mood for instant pictorial gratification and just can't wait long enough to think what delicious non rotting flesh delicacies you would partake in, just scroll down!

Here is a small example of some of the foods this vegan has ingested in the recent past.

Well, there was a brief view into food as i see it. If ever you are asked, "What do vegans eat?" point them here. "Wait, but you didn't post any salads!?" you may say. Well how un-vegan of me! But really, I do love salads, just not the typical, everyday, common, american, iceberg lettuce, smothered in some creamy hydrogenated oil dressing, thank you very much.

potato cake

I had surgery to remove my wisdom teeth a few days ago so it has been quite a bit difficult to chew my food. Basically anything that is mush or juices are all I can eat, so I'm really craving some hard foods. But since I cannot get that right now, and I've run out of fresh fruits for the juicer, I have to think creatively to keep it interesting.

Ry baked up some nice sweet potatoes the other day and mashed some of them up for me with some smart balance, which started my wheels a'turnin. I remembered back to high school German class where Frau Rogers fried up these tasty potato cakes and we put some apple sauce on top of them. I remember them being sehr sehr gut! Since then I have spent some time in Sverige and have eaten many a potato!

This time I am out of applesauce so I'll make it a little more savory.

Savory Potato Cake
what's in it?
- New Red Potato
- Smart Balance Soy Garden Butter
- Chives
- Garlic
- Rosemary
- Real Salt

how did this happen?
- Bake the Potato wrapped in foil in the oven around 425 degrees for somewhere over a half an hour until a fork slides into it easily.
- Mash it up with a spoon full of Butter, some diced up chives and garlic, a four finger pinch of rosemary, and a three finger pinch of salt.
- Fry it up in some butter on medium-highish heat until browned on both sides.
