tempeh veggie spinach salad


Fry up some tempeh and chop up some veggies!

Tempe Veggie Spinach Salad
what's in it?
- Romain Lettuce
- Spinach
- Tempeh
- Bell Pepper
- White Mushroom
- Toasted Rye Bread
- Alfalfa Sprouts
- Wild Onion
- Roasted Unsalted Sesame Seeds
- Annie's Shitake and Sesame Vinaigrette
- Extra Virgin Olive Oil
- Black Pepper
- Savory
- Basil
- Salt

how did this happen?
- Heat up a small pan with a dollop of olive oil, cube up the tempeh and toss it in. Add wild onion, basil, savory, black pepper, salt, and brown up.
- Chop up all the veggies while the tempeh is cooking, then throw it all together.

  1. Looks delicious! I'll try that one. Lately I've been using coconut oil instead of olive oil when cooking. I've read that olive oil changes properties when heated to the point where it steams and becomes harmful for consumption. It doesn't make my food taste cocounutty either in case you were wondering... Kalmar Rebecca

  2. It's not that olive oil becomes harmful when heated. Usually it's cold pressed or extra virgin, none of these has been heated over 40 degree's celsius before, and when you cook it enzymes night release and make your food taste a tad bitter.
    As far as harmful, it doesn't really matter with what you cook, it's the process of high heat cooking and what that does to the fat that we know little about. There are chemical processes going on, and some things in brown/blackening of the fat is not good, if there's more in olive oil, i don't think so. It's rather a question of the oxidation properties of the oil. Like corn oil, can take a little higher heat. But try to cook on a somewhat low heat (under 175c) and you should be fine.
    Olive oil taste better uncooked though, and I try use it for non cooking puposes, and use a local produced rapeseed oil for cooking.
